# Directions:
01 - Preheat oven to 350°F and line a baking sheet with parchment paper.
02 - In a large bowl, beat the softened butter and granulated sugar together until light and fluffy.
03 - Add the vanilla extract and egg yolk to the creamed mixture and mix until fully combined.
04 - In a separate bowl, whisk together the flour, ground almonds, and salt.
05 - Gradually add the dry ingredients into the wet mixture, stirring continuously until a smooth dough is formed.
06 - Portion approximately 1 tablespoon of dough per cookie. Roll each portion into a log about 2.5 inches long, then gently curve it into a crescent shape and arrange on the prepared baking sheet.
07 - Bake for 12 to 15 minutes, or until the edges turn a light golden color.
08 - Allow cookies to cool slightly, then dust evenly with powdered sugar mixed with cinnamon, if desired.
